Over the last year I have given up a lot of treats that do me no good at all.
I am lactose intolerant and I am allergic to nuts so store bought cookies and cakes do not come into my house very often.
I am off chocolate too - yes it is true!
That said - a treat every now and then is good - and I do prefer to make them myself when I can.
One of my favourites are these waffles :-)
We call them dry waffles or cake waffles here in Norway.
Where my family comes from they are also known as hard waffles.
I know there are many people who for different reasons keeps away from gluten, and these waffles are gluten free!
Here is my favourite recipe:
125 grams sugar
125 grams melted butter (lactose free butter is an option)
250 grams potato flour
1,5 tea spoon baking powder
Edit: add 1 tea spoon of cinnamon, cardamom or vanilla if you so prefer - maybe even cacao powder......
Beat the eggs with sugar until it is light yellow and thick.
Let the melted butter cool a little and add to the egg mix.
Sift potato flour and baking powder into the batter and mix well.
Let the batter rest for 15 minutes before making waffles.
I use a table spoon and prefer to make small waffles (in the middle of the iron).
Bite size is good :-)
The waffles are soft when you take them out of the iron, so be careful - and they get crisp when they cool, like a crisp cookie.
Cool them on a rack and store them in an air tight cake tin.
Thank You for sharing the recipe, Hanne. This will be so good with fresh berries. Glad you are feeling strong and healthy since giving up a few treats.ReplyDelete
Hello Hanne! Your waffles look delicious! Thank you for sharing the recipe! :) xxReplyDelete
Yum! I used to buy the round ones with a caramel inside them. Alas, I can't have potato or sugar either. But I do have the odd treat here and there. My dietry restrictions are quite harsh. Enjoy.ReplyDelete
I remember my mother baking waffels like this. Think I have to give them a try.ReplyDelete
