Over the last year I have given up a lot of treats that do me no good at all.
I am lactose intolerant and I am allergic to nuts so store bought cookies and cakes do not come into my house very often.
I am off chocolate too - yes it is true!
That said - a treat every now and then is good - and I do prefer to make them myself when I can.
One of my favourites are these waffles :-)
We call them dry waffles or cake waffles here in Norway.
Where my family comes from they are also known as hard waffles.
I know there are many people who for different reasons keeps away from gluten, and these waffles are gluten free!
Here is my favourite recipe:
2 eggs
125 grams sugar
125 grams melted butter (lactose free butter is an option)
250 grams potato flour
1,5 tea spoon baking powder
Edit: add 1 tea spoon of cinnamon, cardamom or vanilla if you so prefer - maybe even cacao powder......
Beat the eggs with sugar until it is light yellow and thick.
Let the melted butter cool a little and add to the egg mix.
Sift potato flour and baking powder into the batter and mix well.
Let the batter rest for 15 minutes before making waffles.
I use a table spoon and prefer to make small waffles (in the middle of the iron).
Bite size is good :-)
The waffles are soft when you take them out of the iron, so be careful - and they get crisp when they cool, like a crisp cookie.
Cool them on a rack and store them in an air tight cake tin.

ReplyDeleteYum! I used to buy the round ones with a caramel inside them. Alas, I can't have potato or sugar either. But I do have the odd treat here and there. My dietry restrictions are quite harsh. Enjoy.
